The gap on the 2-roller mills should be set somewhere around .037 - .055". You will need to assess the crush, and determine if the gap should be smaller or wider. On the two roller mills you will find a point at which the mill will stop feeding the grain when you close the gap too tightly.

I opted to go with the Monster Mill MM3. Really nice mill. I'd highly recommend it. On the maiden grind before my last brew I ground 1 lb of my grain bill to see how it worked. And right away I noticed how much finer the crush was compared to what I was getting from the store. I have my mill set at 0.045" gap.

You say in the video that most folks will probably be pleased with a crush setting between 2 and 1 (1.55mm and 1.4mm), with 2 leaving some grain uncracked and 1 maybe too fine. It looks like there are detents for factory presets. Does the mill allow for setting the gap between the factory whole-number settings?

For instance one might have gap settings of .030, .035, .040, and .045. There is simply no reason one should have to disassemble the MM3 to change gap settings every time they want to adjust the gap.....

Set the gap using feeler gauges to .040 inches and your efficiency should go up. As Cmiyc stated, this is wrong. You don't need to mill it twice, simply tighten the gap. it's easy to do, you loosen the two set screws on the second (non-driven roller) side and adjust with the knurled knobs to move the roller closer.

MM3 mounted to my mill stand. I used some 2×4 scrap to make the legs and framing, just high enough to get a large bucket under. The top is actually supported by some 1×2 screwed horizontally across the 2×4- I find its easier to get the table to sit flat this way instead of screwing directly to the top of the legs.

For the third batch, I adjusted the MM-3 down slightly to a 0.033" gap. I also ran some grain through my 2-roller mill with this same 0.033" gap to do a qualitative/visual comparison. The 2-roller mill had a small amount of whole kernels that hadn't been cracked at this gap setting, whereas the 3-roller MM-3 had cracked every kernel.

You need to make sure that you set the gap this way so that the mill feed properly. If the ends are not set the same, the idler will bind. ALSO, don't set the gap wider than 0.045". You're wasting your time at a gap wider than that, and the mill might not feed properly, if it's bigger than that.

Even after a thorough cleaning, the passive roller is still having trouble spinning. I'm thinking, perhaps mistakenly, that the Monster Mill's (MM2-2.0 or MM3-2.0) larger rollers (and increased surface area) would make a difference. The Monster Mill also has oil impregnated bushings, which I think might help prevent this situation.

I switched to wet milling - this lets me mill fine while still preserving most of the grain husk (this ensures good flow in the grain bed). I set my 3 roller mill to .024 inches. I typically get about 75% efficiency. One other note - if you really want to increase the OG, you should be able to do a reiterated mash.
